Rainbow Ice Cream CakeDespite its intricate appearance, construction of the Rainbow Ice Crème Tower is rather simple. A fresh seasonal fruit base for each layer allows maximum bursting flavor! With the jubilance of a fruit salad, this recipe creates an adventurous cake-eating experience through tart, sweet, piquant, earthy, and downright scrumptiously-flavored nuances. Celebrate the height of summer with a towering rainbow of abundance!

Base Layer
Coco-Date Crust

10 organic Medjool dates (pits removed)
3/4 cup raw, shredded, organic coconut
1 Tbl raw carob raw cacao

 

Combine all ingredients in food processor and pulse until crumbly, sticky texture is reached. Press mixture into 8-inch spring form pan and place in fridge or freezer.


Inner Layers
Red Raspberry Ruckus
A tart and tangy layer to tantalize the tongue

1 cup organic red raspberries
1 organic frozen banana
2 organic Medjool dates (pits removed)
1 tsp pure vanilla extract (optional)

 

Orange Carrot Enchantment
A layer of earthy, sweet orange flavors

1 to 2 organic carrots (or 1/4 cup carrot juice)
1 organic frozen banana
2 organic Medjool dates (pits removed)
1 tsp orange zest (optional)

 

Yellow Mango Magnificence
A layer of dripping, golden sweetness

1 to 2 organic ripe juicy mangoes
1 organic frozen banana
2 organic Medjool dates (pits removed)

 

Green Kale Glory
A layer of bright, emerald green that’s surprisingly succulent and sweet

2 organic, ripe, spotty bananas
2 organic, frozen banana
2 organic, Medjool dates (pits removed)
2 to 3 organic, Italian kale leaves
1 tsp pure vanilla (optional)
1 tsp spirulina powder (for extra emerald hue)

 

Blue Blueberry Benevolence
A classic layer of blueberry bliss

1 cup organic blueberries
1 organic, frozen banana
2 organic Medjool dates (pits removed)
1 tsp pure vanilla (optional)

 

Topping
Purple Blackberry haze
A bright, juicy blackberry bramble blend

1 cup organic blackberries
1 organic frozen banana
2 organic Medjool dates (pits removed)

 

White Coconut Royalty
Pure coconut bliss to take the rainbow tower to luscious heights!

1/2 meat of young coconut
1 tsp pure vanilla
2 Tbs water

 

  • Process ingredients for each layer in a high-speed blender or food processor until smooth.  Blend one layer at a time.
  • For the White Coconut Royalty final layer, place small dollops on top of cake and swirl in fanciful designs, using a knife tip or chopstick.
  • Place back in freezer to set up completely, around 2-4 hours.
  • This dessert tower can be simplified by choosing just a couple flavors instead of the whole rainbow
