These crunchy vegetables pair well with the tart dried fruit, and sparkles like gems. If you can’t find sour cherries try dried cranberries.
2 cups grated cabbage
1 cup diced celery (small dice)
1 1/2 cups grated carrots
1 Tbs lemon juice
1/4 cup aioli spread or dairy-free mayonnaise
2 Tbs each: raisins and sour cherries
1 1/2 Tbs raspberry or champagne vinegar
1 Tbs lemon zest
1/2 cup chopped parsley
1. Combine cabbage, celery, carrots and lemon juice. Toss until vegetables are coated.
2. Blend in raisins and cherries. Mix aioli spread with vegetables, sour cherries and lemon zest.
3. Garnish with parsley.
