Pear and Pecan Spinach Salad with Creamy Poppy Seed Dressing

2 cups baby spinach, rinsed and dried
1 Tbs pecan pieces
1/2 pear of choice, sliced or julienned
2 Tbs crisp bacon pieces (optional)


Place the baby spinach down then top with the remaining items.

Creamy Poppy Seed Dressing

(makes 1 cup)

3/4 cup Vegenaise® (vegan mayonnaise)
1/3 cup agave
2 tsp apple cider vinegar with “mother”*
4 tsp poppy seeds


Whisk all ingredients together and enjoy. To store, refrigerate in an airtight container.

*Mother of vinegar is a healthy bacteria found in fermenting alcoholic liquids and high-quality unpasteurized vinegars like Bragg’s Apple Cider Vinegar.
