This recipe is a great base for a healthy and filling vegan taco. Spicy roasted sweet potatoes provide depth and texture, and you can add any of your other favorite taco toppings for additional fun and flavor!
Serves 4
2 large sweet potatoes, peeled and diced into ½ in. pieces
2 Tbl olive oil
1 tsp cumin
1 tsp paprika
1 tsp sea salt
½ tsp oregano
2 tsp chili powder
1 can black beans, rinsed
½ c salsa
¼ c cilantro, chopped
8 tortillas, corn or flour
your favorite toppings:
avocado, cheese, sour cream, cabbage, etc.
Preheat oven to 350 degrees. Toss sweet potatoes with oil and spices and roast for 30 - 35 minutes or until tender. Combine beans with salsa and simmer on stove.
Add to sweet potatoes when done. Stir in cilantro. Use as a vegan taco filling in your favorite tortillas, on top of a warm bed of rice or assemble as a burrito bowl for a gluten free option.
You can continue to top these tacos with all of your favorites, like avocados, green onions, roasted bell peppers, cheese and sour cream. The possibilities are endless!
