It’s hard not to want to reach for a juicy burger on hot, summer nights. This one originated when I intended to make a complex curry dinner, but then realized I didn’t want to stand over a hot stove!
¼ medium yellow onion, finely chopped
¼ large jalapeno, minced
5 large mushrooms, finely chopped
1 Tbl olive oil
1 lb ground beef
½ lb ground pork sausage
½ medium zucchini, grated
1 tsp yellow curry powder
1 tsp Turkish paprika
½ tsp dried basil
8 slices cheddar or Manchego cheese
8 English muffins or burger buns
salt and pepper
For the sauce:
½ c mayonnaise
¼ c whole milk yogurt, plain
¼ c fresh basil, chopped
1 clove garlic, mashed
1 tsp fresh lime juice
Condiments:
8 tomato slices
8 dill pickles, sliced
1 jar fresh sauerkraut, strained, served
warm or cold
At least an hour before dinner, sauté the onions, jalapeño and mushrooms in the olive oil. Mix the meats with the zucchini, herbs and spices. Add the sautéed vegetables and mix well. Form the mixture into patties, place on a plate, cover and chill in the refrigerator.
When ready to start cooking, get the barbecue grill going. Make the sauce by combining all the ingredients, then set aside to chill. Prepare the condiments.
Grill burgers until done to your liking, putting cheese on just before they are finished. We like to use English muffins and toast them on the grill too. Let your guests add whatever condiments they desire.
