1 cup Forbidden rice (black rice)
14 oz can full-fat coconut milk, divided
1 ½ cups water
3 whole star anise
¼ tsp sea salt
¼ cup coconut sugar (or other sweetener)
1 ½ cups diced banana or mango (optional)
¼ tsp nutmeg
¼ tsp ginger powder
¼ tsp cardamom powder
1 tsp cinnamon
Place rice in a medium bowl and fill with cool water. Stir rice thoroughly and drain water. Repeat two more times until water runs clear.
Set aside ¼ cup of coconut milk.
In medium pot, combine remaining coconut milk, water, rice, salt, star anise, nutmeg, ginger, cardamom and cinnamon. Bring to a boil.
Reduce temperature to low, cover and simmer until rice is tender, about an hour. Stir every few minutes. There should be a little liquid left as the pudding will absorb it and thicken as it cools.
Once rice is tender, remove from heat. Remove star anise. Stir in coconut sugar.
Distribute evenly in four small bowls. Drizzle about a tablespoon of reserved coconut milk over each bowl. Divide banana or mango evenly over the four dishes of rice and serve warm or chilled.
Serves 4. Will keep 3 days refrigerated.
