Gorgeous ears of sweet, local corn are finally rolling in to our produce department! To take full advantage of this time of year, you’ll want to have this recipe on hand for those times when peak-season corn is at its height, but you’re growing a little weary of alternating between steamed and grilled. If you have never tried raw corn before, you have been missing out! Go ahead and nibble a few kernels of a freshly shucked cob. You will be amazed at how sweet, creamy and refreshing it is with absolutely no heat applied. Perfect for those sweltering evenings when you just can’t bring yourself to fire up the grill or turn on the stove.
This recipe pulls together some of the most abundant veggies and herbs of July. It’s a forgiving combination, so if you have a little more of one thing and a little less of another, the flavor will still be delightful!
Ingredients
5-6 ears of fresh corn, shucked
½ cup zucchini, diced
¼ cup sliced green onions
juice of 1 lime
1 Tbl white, cider or red wine vinegar
¼ cup olive oil
½ tsp black pepper, freshly ground
1 pint cherry tomatoes, halved
½ cup basil leaves, finely shredded
¼ cup mint leaves, finely shredded
1⁄3 cup crumbled feta (for a vegan version, substitute 1⁄3 cup of diced avocado and ½ tsp sea salt)
One by one, place each ear on its side, and carefully slice kernels close to the cob.
Turn ear on the flat, cut side and continue slicing. Keep turning and slicing until you’ve removed all of the kernels from the cob. Don’t worry too much about perfectly sliced kernels. The odd sizes add to the charm and texture of this salad!
Place kernels in a large bowl. Add zucchini, green onions, lime juice, vinegar, olive oil and black pepper. Toss to thoroughly coat. Fold in cherry tomatoes, basil, mint and feta (or avocado and salt). Adjust seasonings to taste. Makes 4-6 servings.
