Holiday cooking is my all-time favorite! It’s something my mother and I enjoyed doing together. Since going gluten free, I have made it my mission to never miss a thing I loved before I ditched gluten. Gravy was an every-week favorite in my household; my mom was the gravy queen! So, I used some of her techniques in this recipe, just with gluten free ingredients.
I have been vegan and gluten free for 3 years. It started out as a hard road because no one I knew was vegan at all, and vegan and gluten free food didn’t even exist in any restaurant. My partner at the time was vegetarian so that got me somewhat close, but being a person who loved gluten, it was rough! For the first year, I denied myself anything that resembled gluten. It then became my next project to master gluten free cooking that didn’t limit my options.
Now, I inspire to take all that I have learned and combine it with my passion and love for cooking to teach and feed others, which is why I started Tasteful Joy!
1 Tbl olive oil (or water)
1 small white onion, finely chopped
2 garlic cloves, minced
4 oz mushrooms, sliced (about 1 cup loosely packed)
2 Tbl tamari
½ c water
½ c vegetable broth
½ c milk alternative (if using soy, use very little – it is very sweet)
3 Tbl gluten free flour, arrowroot or cornstarch
½ tsp sea salt, fine
¼ tsp black pepper
Heat skillet on medium heat. Add oil. Once skillet is hot, add onions and sauté about 3 minutes. Add garlic, mushrooms and tamari, and sauté until mushrooms have cooked down – about five more minutes. Then, add vegetable broth and milk.
While everything is cooking, mix together half the water with the flour to create a thickener.
Add salt, pepper, garlic powder and onion powder to skillet. Let simmer together for about four minutes. Then, pour flour mixture into gravy and allow time for it to thicken. Add more to achieve your desired consistency. Add more seasoning if desired. Pour over mashed potatoes and enjoy!
