This version of muhammara originated in Aleppo, Syria. Similar recipes are found in Lebanese and Turkish cuisines.
Makes approx. 1½ cups
1 l Large red bell pepper, roasted (or 1 medium jar roasted red bell pepper)
3-4 scallions, chopped
1 tsp lemon juice, fresh squeezed
1 tsp ground cumin
1 tsp kosher or sea salt, to taste
3 tsp pomegranate molasses (or pomegranate juice, reduced with a little brown sugar)
1 tsp red pepper flakes
5 Tbl olive oil
¾ c walnuts, lightly toasted
4-6 Tbl fresh bread crumbs
1 baguette, about 1 foot long, sliced (or GF, if available)
Using a food processor or heavy-duty blender, combine the bell pepper, scallions, lemon juice, cumin, salt, 2 tsp of pomegranate molasses (or juice), ½ tsp red pepper flakes, 4 Tbl olive oil and all but 2 walnuts. Puree until almost smooth.
Add 4 Tbl of breadcrumbs and pulse to combine. If the mixture does not hold its shape, add the remaining bread crumbs and pulse again. Season to taste with more salt, if desired.
Scrape the dip into a bowl and make a well in the center with the back of a spoon. Put 1 Tbl of olive oil, 1 tsp pomegranate molasses (or juice) and the remaining red pepper flakes in the well. Crush the reserved walnuts between your fingers and sprinkle them over the top. Serve at room temperature with the sliced baguette on the side.
