Hearty with a delightful chewy texture, this recipe will never go mushy and you cannot ask for a less refined grain. It’s endlessly customizable, vegan friendly and can be stored in a mason jar in the refrigerator all week. This is the easiest, healthy, no-cook breakfast! Makes 2 servings.
½ cup Marlene’s bulk steel cut oats
1 ½ cups milk (any kind, but almond and coconut milk work brilliantly)
1 Tbl maple syrup
1 Tbl chia seeds
1 Tbl shredded coconut
tsp cinnamon
¼ tsp nutmeg
¼ tsp sea salt
Additions you may love:
• flax or hemp seeds
• protein powder
• fruit — fresh, frozen or dried
• walnuts, almonds, pecans or nut butter
In a large jar, mix together the milk, syrup, steel cut oats, chia, coconut, cinnamon, nutmeg and salt. Cover the jar tightly and refrigerate overnight. Shake to mix liquid morning and evening.
When ready to serve, divide the oats and portion the desired amount into a bowl. (At this point, you can also divide the oats into individual containers and refrigerate for the week.) Top with any desired fruit, nuts or other toppings.
Leftover steel cut oats can be stored in the refrigerator for up to 5 days. Their texture will soften as they sit, so if they are too chewy for you on Day 1, you can allow them to absorb more liquid for another day or two or three!
