Serving size: 4-6 | Prep time: 15 minutes
4 cups watermelon, peeled and cut into chunks
4 cups cantaloupe, peeled and cut into chunks
4 cups honeydew melon, peeled and cut into chunks
1/2 cup agave syrup
1/4 cup fresh lime juice
1 generous teaspoon grated lime zest
1/2 teaspoon himalayan salt
2 tablespoons fresh mint, finely chopped
1 ½ tablespoons of fresh basil, finely chopped
1/4 cup raw pumpkin seeds
INSTRUCTIONS
Mix the agave syrup and lime juice in a small bowl until well blended. Stir in the lime zest.
Add all of the cut up melon to a large bowl. Coat the melon with the agave lime dressing and toss!
Place the salad onto your serving plate/platter then sprinkle the salt, mint and basil over the top.
Tips:
Add salt and dressing fresh before serving if planning on bringing to a gathering to share.
Marinate the fresh mint and basil in agave syrup ahead of time for more fresh herbal flavor in the dressing.
