In Japan, during the unbearable hot and humid summer, the classic cold Japanese noodle, known as zaru soba is the perfect dish to cool down. Buckwheat noodles, or soba, are a staple in Japanese cuisine.
We put together a vegan version of this classic for those sweltering afternoons or evenings in deep summer when you just can’t bring yourself to eat a hot meal. With a few simple ingredients on hand, delicious cold soba comes together in about 25 minutes!
