A Satisfying Snack with Flavors of the Season
½ cup creamy almond butter
¼ cup pumpkin seed butter
8 Medjool dates
1 ½ cups rolled oats
2 Tbl chia seeds
2 Tbl flax meal
½ cup vanilla plant protein powder (Genuine
Health or Garden of Life are excellent choices)
½ cup canned pumpkin
2 tsp pumpkin spice
¼ tsp sea salt
1-2 Tbl water
¼ cup whole nuts (hazelnuts, pecans or walnuts)
In a food processor, add almond butter, pumpkin seed butter, dates and oats. Pulse until just
mixed. Scrape sides of bowl. Add chia seeds, flax meal, protein powder, pumpkin spice, salt
and pumpkin. Pulse until all ingredients are well combined.
If mixture seems too dry to form balls, add water one tablespoon at a time until batter is
cookie dough consistency.
Form balls using 2-3 teaspoons of dough and place on parchment or foil-lined plate. Flatten
balls slightly and press a nut into the top of each cookie. Refrigerate for 30 minutes and serve.
These no-bake cookies have the best flavor when chilled overnight. Will keep one
week refrigerated.
