2 lbs collard greens
1 small onion, diced
8 garlic cloves, minced
¼ lb Skagit River Ranch uncured bacon, cut into 1-inch pieces
½ cup white wine
2 cups vegetable or chicken broth
salt to taste
Trim stems from collards. Stack leaves, roll tightly and slice into ½ inch ribbons. In a large pot, cook bacon over medium heat. Remove bacon pieces as they become crispy and set aside. Turn heat to low and sauté onion and garlic in bacon fat until golden brown, about 10 minutes. Add collard greens and sauté until wilted. Pour in wine and broth. Add bacon pieces and salt. Cover and reduce heat to lowest simmer and cook to desired tenderness, 20-30 minutes. Makes 4-6 servings.
