If your kids don’t like Brussels sprouts, maybe it’s because they haven’t had these!
1 lb Brussels sprouts, halved
2 Tbl olive oil
½ tsp sea salt
1 Tbl balsamic vinegar
2 Tbl raw or sprouted walnuts, chopped
2 Tbl parsley, chopped
¼ cup feta, crumbled
Heat a heavy-bottomed skillet over medium high for 4 minutes.
Add olive oil and tilt pan to coat bottom thoroughly. Working quickly, place Brussels sprouts halved side down in pan and fry undisturbed about 6 minutes, until a deep sear forms.
Add salt and stir every few minutes until sprouts are tender and evenly browned, about 6-8 minutes more.
Remove pan from heat. Stir in walnuts and balsamic vinegar and stir occasionally until walnuts begin to toast. Transfer to serving plate and top with parsley and feta. Serve warm.
