Serves 4
4 medium potatoes, peeled and diced
2 medium yellow or white onions, diced
1 tsp turmeric
1 ½ tsp salt
½ tsp white or black pepper
½ tsp dried fenugreek leaves
1 lemon, oil, water, as needed
Heat about 1/8 cup of oil in a sauté pan. Add diced onions and fry on medium-high heat. Stir often to prevent from burning. Add turmeric and combine well; stir in the fenugreek.
Push the onions to the side or place on a plate. Add more oil to the pan, along with the potatoes and salt. Fry the potatoes at medium heat, stirring to make sure they are browned on every side.
Turn the heat down to medium-low; mix in the onions and sprinkle with pepper and dried fenugreek leaves. Taste for salt and adjust if needed. Cook for another 7-10 minutes, until potatoes are soft. If needed, add a few tablespoons of water and cook a little longer. Squeeze some lemon juice over the potatoes and serve with a dollop of yogurt. Enjoy!
