Makes 12
3 c rye flour, freshly ground
1 c Sucanat (unrefined and unprocessed cane sugar)
1 tsp baking powder
1 tsp pink Himalayan salt
3 eggs
1 1/3 c water
2/3 c extra virgin olive oil
4 tsp organic lemon flavoring
¾ c organic blueberries, frozen
Preheat oven to 400 degrees.
Assemble wet ingredients in a bowl, mix with a wire whip and set aside.
Mix dry ingredients in a separate bowl. Add blueberries to dry mixture; mix in gently so berries are coated with flour. Add lemon flavoring in wet bowl before blending.
Then, stir the dry ingredients into the wet ingredients gently, just until everything is wet. Do not over mix, or muffins will be tough and flat.
Fill muffin pans 2/3 full immediately after mixing. Bake for 13-16 minutes. (Each oven may vary a bit.) Muffins are done when they spring back to the touch.
