Grain has many healthy properties, and it has sustained people all over the world for thousands of years. However, in the U.S.A., we have been hybridizing wheat to increase the gluten content for well over a century. Today, wheat contains as much as four-times the gluten than the original grain we started with, which is why we have all watched the gluten-free craze go right off the chart. While that is understandable, food marketers have more often than not answered the need for gluten-free processed food with high sugar and low nutrient foods. We need to be eating homemade, properly-prepared, nutrient-rich whole foods.
In our clinic, there is almost NO ONE whose body tests as wanting American wheat. It’s sad. The good news is that you CAN do something about it. Grind your own grain and make baked goods at home. You can type the words “grain mill” into your favorite search engine on the internet. Once you have a mill, you can use whole organic grains readily available at Marlene’s. Grains like rye, emmer, einkorn, and spelt, can all be found in the bulk room cooler at Marlene’s. Try our famous recipe for Rye Lemon Blueberry Muffins- you’ll love them!
