Simmer Sauce :
2 Tbl olive oil
1 onion, diced
3 garlic cloves, minced
2 red or yellow bell peppers, di
3 cups tomatoes, diced (or 28oz canned)
¼ cup fresh basil leaves, cut into strips
¾ tsp sea salt
Chopped Veggies:
2 cups zucchini, medium chopped
2 cups yellow summer squash, medium chopped
2 cups eggplant, medium chopped
2 cups tomatoes, diced
Herbal Seasoning:
2 Tbl fresh basil leaves, cut into strips
2 tsp fresh thyme leaves
2 garlic cloves, minced
1 tsp fresh rosemary, minced
¼ cup olive oil
2 Tbl red wine or balsamic vinegar
Oven 350°.
Sauce: Heat olive oil in frying pan over medium. Sauté onion and bell pepper 5 minutes. Add garlic and sauté about 5 minutes more until mixture is soft and onions are translucent. Stir in tomatoes and basil and heat through. Pour mixture into a 9x13 baking dish and distribute evenly.
Veggies: Gently mix chopped vegetables. Distribute evenly over sauce.
Seasoning: Whisk together all ingredients. Pour evenly over vegetables. Salt to taste.
Cover ratatouille with foil or parchment and bake for 45 minutes. Uncover and bake 15-20 minutes more until vegetables are fork tender.
Serve alone or over french bread slices. Tastes even better the next day!
