1 Tbl yellow curry paste or powder
1 Tbl red curry paste
1 ½ cups vegetable stock or water
1 onion, diced
2 cups zucchini, medium chopped
2 cups yellow summer squash, medium chopped
2 cups eggplant, medium chopped
2 cups tomatoes, diced
1 cup coconut milk, canned
½ cup red lentils, dried
2 cups fresh kale leaves or spinach, chopped
½ cup basil leaves, cut into strips

In a large soup pot or Dutch oven over medium heat, place ¼ cup of stock and both curry pastes. Heat until simmering. Add onion and sauté about 5 minutes until onions are translucent. Add zucchini, squash, eggplant and ½ cup stock. Sauté 10 minutes.
Stir in tomatoes, ¾ cup stock, coconut milk and red lentils. Bring to a boil and immediately reduce heat to low. Cover and simmer 20 minutes, until red lentils are tender. Add kale or spinach and basil and simmer 2 minutes until just wilted. Salt to taste.
Serve alone or over rice or rice noodles. Tastes even better the next day!
