1 ½ cups brown basmati rice
water
25-30 threads Cyrus saffron
½ tsp sea salt
1 ½ Tbl olive oil
¾ cup red onion, thinly sliced
1/3 cup dried cranberries
1/3 cup sprouted almonds
1/3 cup pistachios, shelled
¼ tsp turmeric powder
¼ cup mint leaves, thinly sliced
Place brown basmati rice in large bowl and cover with cool water. Soak for 15 minutes. Strain and rinse 3 times, until water runs clear. Place rice in heavy saucepan and add 2 cups of water, orange zest, sea salt and saffron threads. Bring to boil over medium high. Immediately reduce heat to low. Cover and simmer for 35 minutes. Drain any excess water and allow rice to sit covered for more 10 more minutes. Fluff with fork.
While rice is cooking, heat olive oil in large skillet over medium high. Saute red onions until they are lightly carmelized. Reduce heat to low.
Add turmeric, cranberries, almonds and pistachios and toss a few minutes until warmed through.
Remove from heat. Gently fold in rice and mint leaves.
Can be served warm or chilled.
Serves 6-8.
