This is a simple and versatile oil that you will want to use again and again. It is ideal as a dipping oil for warm, crusty breads. Try substituting this oil for plain olive oil in salad dressing and you may never look back! It also beautifully compliments savory grain and pasta dishes and is quite wonderful drizzled over fish or seasoned, seared tofu slices.

1 ½ cups organic
extra virgin olive oil
4 fresh rosemary sprigs
6 garlic cloves, peeled and smashed
cruet or glass bottle with seal
In a small saucepan, place rosemary and garlic. Add olive oil, making sure garlic and rosemary are completely submerged. Heat over medium low for 7 minutes. Remove from heat and allow to cool 1 hour. Oil will be cloudy. Carefully strain and pour into a cruet or glass bottle and seal. Use within two weeks or refrigerate for up to a month.
