Serves four people, adjust quantities as needed
2 acorn squash, small
2 pears
ground cinnamon, clove, allspice, ginger,
cardamom and nutmeg, to taste
Preheat oven to 375 degrees. Cut 2 smallish acorn squash in half from stem to tip. Remove the seeds (I use a large, strong spoon). Cut two pears in half from stem to tip. Remove core and cut as much off the top and bottom to fit inside the center of the acorn squash. Place a pat of butter inside each acorn squash and set open-side up on a baking pan.
Place pears inside squash so the flat sides are flush. Sprinkle with ground cinnamon or a combination of ground cinnamon, clove, allspice, ginger, cardamom, and/or nutmeg. Place flat side down on an oiled baking pan.
Bake in preheated oven for 20-30 minutes or until the squash is soft when pierced with a fork. Serve warm, flat-side up as an accompaniment to a holiday dinner that might include roasted organic turkey with red potatoes, carrots and beets, halved Brussels sprouts sautéed with diced bacon, onion and mushrooms, and green salad with red peppers, palm hearts, pumpkin seeds with a balsamic and extra virgin olive oil seasoned salad dressing.
